This recipe makes our mouth water. Homemade sausage rolls are DELISH but this little number takes it to the next level. Perfect for a BBQ on Australia Day, we vote!

What you’ll need…

  • 600g beef sausages
  • 2 cups grated cheese
  • 2 slices white bread, processed
  • 1 onion, peeled
  • 2 cloves garlic, peeled
  • 1 egg
  • 1 -1 1/2 tablespoons Vegemite
  • 1 1/2 tablespoons white sugar
  • Eggwash (1 egg yolk mixed with 1 tablespoon
  • 3 sheets puff pastry

How to…

Step 1) Preheat oven to 200C. You’ll need to cut sausages open, and place meat in a bowl. Throw the remainder of the ingredients into a food processor (excluding Eggwash and puff pastry) and mix together. Once you have a nice consistent mixture, throw a test piece in a frypan to make sure the seasoning is ok and the vegemite isn’t too strong. Place mixture in the fridge for 10 minutes.

Step 2) Open your puff pastry, and cut in half – making two long rectangles. Divide the mixture and begin rolling them into a sausage shape between wet hands. Place in the centre of the puff pastry (making sure you don’t overfill). Brush eggwash onto the pastry and seal the sides. Repeat with the remainder of the mixture and chill for 10 minutes.

Step 3) Once ready, cut little patterns into the top (or you can add sesame or poppyseeds if you like). Brush with the egg wash. Bake for 20 -25 minutes until golden.
